Spending quality time with your children can be a challenge with the demands us parents face every day, so cooking with your children is a great way to spend some time with them away from school work. I recently made this easy and yummy veggie lasagne and thought I should share this with our blog readers. Try making this family meal with your children and get your children involved in layering all the ingredients. Here is my amazing veggie lasagne recipe:
Ingredients:
- Garlic
- 1 x onion
- 2 x Red Peppers
- 2 x Big Aubergines
- 2 x Tins of tomato and onion mix
- Mozzarella Cheese
- Cheddar cheese
- White sauce
- Lasagne sheets
- Salt and Black Pepper
Recipe:
Add butter to pan and fry garlic. Next add the cubed onion and red peppers. Fry for 5 minutes until onions are golden brown. Add the cut aubergines and the tomato and onion mix. Season with salt and pepper and allow to simmer for 10 minutes on low heat
Here is where you can get your children involved:
When the veggie mix is cooked take a casserole dish and spread half of the veggie mix on the base. Cover the veggie mix with the lasagne sheets and layer with grated mozzarella. Pour the white sauce over the cheese. Add the remaining veggie mix on top of the white sauce and layer the lasagne sheets, spread the remaining white sauce over the top.
Bake in oven on 180 degrees for 30 minutes. Take the lasagne out of the oven and sprinkle grated cheddar cheese over the top with some ground black pepper and put the dish back in the oven for another 10 minutes until the cheese is melted and brown. Take the lasagne out the oven, serve and enjoy!
